Okra is one of my favorite summer veggies. I like okra more than I like tomatoes! Unfortunately, okra is often a misunderstood veggie. This recipe is the secret to getting flavorful and crunchy okra.
1 container of okra from Western Wake Farmers Market
1 tablespoon of olive oil
salt and pepper
1. Preheat oven to 425 degrees
2. Slice the ends of the okra and discard. Slice the rest of the okra into 1/2 inch rounds.
3. Place okra in a bowl with olive oil and desired amounts of salt and pepper.
4. Spread okra out on a lightly greased baking sheet and roast in the oven for 12-15 minutes until okra is slightly brown and crispy.
